Greek Night 2016!

 

We love doing our theme nights, and one of our absolute favorite theme nights is our mini Greek Festival. Salt Lake City, Utah has an absolutely fantastic Greek Festival at the beginning of every September with the most amazing Greek food imaginable. However, I haven't been in years because we can't go as a family because my oldest son is allergic to tree nuts (and Greek food, mostly desserts, have a ton of tree nuts in them...I'm looking at you, Baklava). Also, my husband and I just never seem to be able to get away that first weekend in September for a date night to the Greek Festival. However, We have our fantastic family Greek Night and it really satisfies that craving for Greek food.

I'm including the recipes we made on this particular night as well as some of our tried and true favorites from other nights (just so we have them all in one place). Baked Feta

Ingredients:

1 cup cherry tomatoes, halved
1/2 cup Kalamata olives (pitted and chopped)
1 clove garlic, minced
2-3 tablespoons finely chopped fresh flat leaf parsley, divided
1 teaspoon dried oregano
3 tablespoons olive oil
1 pound block Greek feta
4 scallions, sliced
1 pound large shrimp, peeled and deveined, for serving
Bell peppers, sliced, for serving
Salt and freshly ground black pepper, to taste

Directions:

Preheat oven to 400 degrees F.

In a bowl, mix the tomatoes, olives, garlic, 2 tablespoons parsley, oregano, olive oil, and a few grinds of pepper.

Place the block of feta in the middle of an 8x8-inch baking dish. Pile the tomato mixture on top of the feta. Bake for 20 minutes or until the cheese has softened and melted.

Remove from the oven and garnish with the remaining parsley and scallions and serve immediately while still warm. This can be placed back in the oven to melt if the cheese starts to firm up again. Serve with peppers and grilled shrimp.

To grill the shrimp: Preheat a grill or grill pan to medium-high heat. Season shrimp with salt and pepper and grill for 2 minutes per side, or until shrimp is opaque. Serve.

Recipe Notes: This dish is best served hot, warm, or room temperature.

Notes: We did not serve this with the bell peppers and shrimp. We served this with homemade pita chips. Baked feta is a fantastic, wonderful thing. I highly suggest you try it!

 

Spicy Baked Feta (Feta Psiti)

Ingredients:

1 (8 ounce) block feta cheese
2 teaspoons olive oil
2 tablespoons crushed red pepper flakes, or as needed
1 pinch dried oregano, or as needed

Directions:

Preheat oven to 300 degrees F.

Place the feta in an ovenproof baking dish. Drizzle with olive oil. Cover liberally with pepper flakes, and sprinkle with oregano.

Bake, uncovered, in the preheated oven until feta is soft, about 10 minutes.

Notes: This was so, so good. It's hard to say which baked feta I liked better...you might just have to make both of them like we did! Again, we served this with homemade pita chips.

 

Pita Chips

Ingredients:

12 pita bread pockets
1/2 cup olive oil
1/2 teaspoon ground black pepper
1 teaspoon garlic salt
1/2 teaspoon dried basil
1 teaspoon dried chervil

Directions:

Preheat oven to 400 degrees F.

Cut each pita bread into 8 triangles. Place triangles on lined cookie sheet.

In a small bowl, combine the oil, pepper, salt, basil, and chervil. Brush each triangle with oil mixture.

Bake in the preheated oven for about 7 minutes, or until lightly browned and crispy. Watch carefully, as they tend to burn easily.

Notes: These were fantastic. They were delicious topped with the baked feta and they were awesome all by themselves. The kids particularly loved these. They kept asking for more "slices of little pizza."


Grecian Meatballs

Ingredients:

1 lb. lean, finely ground beef or lamb
1 medium onion
1 garlic clove, crushed
1/2 cup bread crumbs
1 tbsp chopped fresh mint
1 tbsp chopped fresh parsley
salt and pepper
1 egg, beaten
olive oil, for brushing

Directions:

Put the ground beef or lamb in a bowl. Grate in the onion, then add the garlic, bread crumbs, mint, and parsley. Season well with salt and pepper. Mix the ingredients well, then add the beaten egg and mix to bind the mixture together.

With damp hands, form the mixture into 16 small balls and thread onto 4 flat metal skewers. Lightly oil a broiler pan and brush the meatballs with oil.

Preheat the broiler and cook the meatballs under medium heat for 10 minutes, turning frequently, and brushing with more oil if necessary, until browned.

Notes: These are awesome. They are very similar to what you can get at the SLC Greek Festival.

Red Sauce for Meatballs

Ingredients:

1 Tbsp olive oil
2 cloves garlic, minced
1 teaspoon oregano
1 (8 oz) can tomato puree
1 (4 oz) can tomato sauce
1 (14 oz) can diced tomatoes
1 (28 oz) can whole, peeled tomatoes

Directions:

In a pan, heat olive oil over medium heat. Add garlic. Cook, stirring well, until fragrant (about 1 minute). Add oregano and cook for about 30 seconds to a minute. Add tomato puree, tomato sauce, diced tomatoes, and whole, peeled tomatoes. Break up whole, peeled tomatoes with the back of a spoon or cut up with kitchen sheers.

Simmer on low while meatballs cook (at least 30 minutes).

Greek Lemon Potatoes

Ingredients:

2 lbs potatoes, unpeeled, washed, and cut into bite sized pieces
2 Tbsp. olive oil
1 lemon, juiced and zest grated (see notes)
4 Tbsp. water
6 cloves garlic, peeled
4 bay leaved
2 rosemary sprigs (see notes)
1 teaspoon fresh thyme, chopped (see notes)
1/2 teaspoon dried oregano
1 pinch sugar
Salt and pepper, to taste
2 Tbsp parsley, chopped

Directions:

Preheat oven to 400 degrees.

Line a 9x13 baking dish with tin foil. Place the cut potatoes into the baking dish.

Drizzle the olive oil, lemon juice, lemon zest, and water over the potatoes. Place the garlic, bay leaves, rosemary, thyme, oregano, sugar, salt, and pepper on top of the potatoes.

Stir well to coat.

Bake the potatoes for 1-1 1/2 hours or until they are cooked through, tender, and slightly crispy.

Stir every now and then during cooking to coat with the herby oil.

Sprinkle with chopped parsley prior to serving.

Source: Darn it, I found this online at least four years ago and now I can't remember what recipe site I found it on. Sorry!

Notes: I didn't have fresh lemons on hand, so I used a liberal amount of bottled lemon juice (to make up for not having lemon zest). The dish was still yummy, but honestly, lemon is the star flavor of this dish. Don't substitute the fresh lemon for bottled juice! If you really love the flavor of lemon, I would recommend using the juice of two lemons and the zest of one. Also, in addition to peeling the garlic, I halved it as well.

As for the herbs, substituting dried herbs works just fine in this dish. I didn't have fresh rosemary, so I used 1 teaspoon dried and crushed it between my fingers as I sprinkled it over the potatoes. I also didn't have fresh thyme, so I used 1/4 teaspoon of dried thyme.

 

Basic Greek Salad

Ingredients:

1 large bunch Romaine lettuce, torn into bite-size pieces
1 cucumber (you can either peel, thickly slice, and quarter this, or simply slice it into rounds with the peel on)
1 pint grape tomatoes, halved
1/2 cup thinly sliced red onion, optional
1/2-1 cup crumbled feta cheese
1/2 cup pitted, sliced kalamata olives
Whole or sliced banana peppers, optional
Favorite bottled or homemade Greek salad dressing (see notes)

Directions:

Combine and toss all ingredients together in a large bowl.

Note: If you would like to make your own Greek salad dressing, here's a simple recipe found in the South Beach Diet cookbook:

Absolutely Fabulous Greek/House Dressing (Large Batch)

Ingredients:

1 1/2 quarts olive oil
1/3 cup garlic powder
1/3 cup dried oregano
1/3 cup dried basil
1/4 cup pepper
1/4 cup salt
1/4 cup onion powder
1/4 cup Dijon mustard
2 quarts red wine vinegar

Directions:

In a very large container, mix together the olive oil, garlic powder, oregano, basil, pepper, salt, onion powder, and Dijon mustard. Pour in the vinegar and mix vigorously until well-blended. Store tightly covered at room temperature.

Notes: The recipe on Allrecipes says, "This is the 'secret' Greek dressing recipe from the pizzeria that I work at. The recipe makes almost a gallon, but can be scaled down easily. It can be used for picnics and travels very well, since it doesn't need to be refrigerated. This is the best dressing I have ever tasted, people offer to buy it constantly, but if we sold it, we wouldn't be able to make enough to use in the restaurant!" This was, indeed, good stuff.

Absolutely Fabulous Greek/House Dressing (Smaller Batch)

Ingredients:

3/4 cup, plus 2 tbsp, plus 1 tsp olive oil
2 1/2 tsp. garlic powder
2 1/2 tsp. dried oregano
2 1/2 tsp. dried basil
1 3/4 tsp. pepper
1 3/4 tsp. salt
1 3/4 tsp. onion powder
1 3/4 tsp. Dijon mustard
1 cup, plus 3 tbsp. red wine vinegar

Directions:

Mix all ingredients, except vinegar, together. Add red wine vinegar and mix vigorously until well-blended. Store tightly covered at room temperature.

Avgolemono Soup (Greek Lemon Soup)

Here is the recipe. I got it from a book Clint gave me, but I have modified it...

Ingredients:

3 pints chicken broth ( 3 16 oz cans)
2 eggs
2 Tbs lemon juice (or more depending on taste, I like things extra lemony)
about a cup of cooked rice or orzo pasta
one cooked chicken breast, shredded
parsley, chopped about 1/4 cup
salt, pepper to taste

Directions:

Bring broth to a boil, reduce to a simmer. In a separate bowl, whisk eggs, lemon juice and salt and pepper. Add a small ladle of the soup to the egg mixture and whisk until well combined, then slowly add this mixture to the pot of the cooking broth. Whisk constantly until texture is smooth and egg is well integrated. Add chicken and rice cook on low for a few minutes, then add some fresh parsley. Yummmmmy!

Note: It is important to add a small ladle of soup to the egg mixture before adding the egg mixture directly to the soup. It tempers the egg mixture so that it doesn't cook immediately once it is added to the soup. If you add the egg mixture directly to the soup, it will end up more like Chinese egg noodle soup with string of egg throughout the soup rather than a silky, creamy texture as intended in this recipe. 


Greek Festival Lemon Rice Pilaf

Ingredients:

1/4 lb. butter
2 cups uncooked rice
1/2 cup fresh lemon juice
5 cups hot chicken broth
salt and freshly ground pepper

Directions:

Heat butter in a heavy skillet. When it is hot, add the rice and, stirring constantly, sauce over medium heat until transparent, but not brown.

Add the lemon juice, chicken broth, and salt.

Cover and simmer for 20 minutes.

Remove the pan from the heat and let pilaf stand uncovered for 5 minutes before serving.

Notes: This isn't a fluffy rice pilaf, it is more of a sticky rice. It is so good. It is spot on with the Greek rice that you can get in a Greek restaurant. The recipe provides this note: "Every September, Salt Lake has an amazing Greek Festival. Back in 2001 I got a pamphlet of Greek recipes from the festival. This rice pilaf is very similar to the rice pilaf served at my favorite Greek restaurant. Opa!" This really does taste like the rice from the Greek festival. Good stuff!

The only change I made was to use half of the butter that the recipe called for. It was still fantastic.


Herbed Greek Roasted Potatoes with Feta Cheese

Ingredients:

5 pounds potatoes, cut into wedges
6 cloves garlic, minced
3/4 cup olive oil
1 cup water
1/4 cup fresh lemon juice
Sea salt, to taste
Ground black pepper, to taste
1 1/2 tablespoons dried oregano
1 teaspoon chopped fresh mint
1 (8 ounce) package crumbed feta cheese

Directions:

Preheat an oven to 450 degrees F. Lightly oil a large baking dish.

Stir the potatoes, garlic, olive oil, water, lemon juice, salt, and pepper together in a bowl until the potatoes are evenly coated; pour into the prepared baking dish.

Roast in the preheated oven until the potatoes begin to brown, about 40 minutes. Season the potatoes with the oregano and mint. If the dish appears dry, pour another 1/2 cup water into the dish. Return to the oven and bake about 40 minutes more. Top with the crumbled feta cheese to serve.

 

Greek Lentil Salad

Ingredients:

1/2 cup French (du Puy) lentils
1/2 cup quinoa
1 pint grape or cherry tomatoes, halved
2 small/medium zucchini or 1 large, cubed
1/2 cup red onion, finely chopped
1/3 cup kalamata olives, halved and pitted
4 tbsp. chopped fresh oregano
1/2 tsp. salt
1/4 tsp. freshly ground black pepper
2 tbsp. fresh lemon juice
6 tbsp. extra virgin olive oil

Directions:

Rinse and drain the lentils. Place in a saucepan and cover by 2 inches with water. Bring to a boil, reduce heat to low and cover. Simmer 20-25 minutes, until tender. Strain and set aside.

While the lentils are cooking, make the quinoa. Place quinoa in a small sauce pot with 1 cup water. Bring to a boil, cover and simmer until all water is absorbed, about 12 minutes.

Remove from heat, keep the lid on and let sit another 2-3 minutes. Fluff with a fork and set aside.

Once the lentils and quinoa have cooled, place in a bowl with the tomatoes, zucchini, red onion, and olives.

Whisk together the oregano, salt, ground pepper, lemon juice, and olive oil. Toss with salad and serve.

Greek Tzatziki

Ingredients:

1 (32 ounce) container plain low-fat yogurt (Greek yogurt can also be used for a thicker tzatziki)
1/2 English cucumber with peel, grated
1 clove garlic, pressed
2 tablespoons fresh lemon juice
2 tablespoons extra-virgin olive oil
2 teaspoons grated lemon zest
3 tablespoons chopped fresh dill
1 tablespoon salt
1 tablespoon fresh ground black pepper

Directions:

Stir together yogurt, grated cucumber, garlic, lemon juice, and olive oil in a bowl. Add lemon zest, dill, salt, and pepper; whisk until smooth. pour into a serving dish, cover tightly, and refrigerate 8 hours before serving.

Notes: This is one of many tzatziki recipes on our blog, but it is a great one. It's always fun to try new combinations. We served this with our smoked lamb and it was fantastic. I need to hunt down the smoked lamb recipe from my brother and add it to this post.


Milk Pie aka Galatoboureko

Ingredients:

4 cups whole milk
1/2 cup fine semolina
1 cup sugar
2/3 cup unsalted butter
4 large eggs
1/2 teaspoon vanilla extract
1 (16 ounce) package phyllo dough, thawed
2/3 cup unsalted butter, melted
3 cups water
2 cups sugar
1/2 large lemon

Directions:

In a 4 to 6 quart heavy pot, bring the milk to a boil, and reduce heat to low. Sprinkle in the semolina, whisking constantly. Add the sugar, and simmer for 5 to 6 minutes, stirring occasionally. Remove from the heat, whisk in 2/3 cup of the butter, and add eggs, one at a time, stirring well after each addition. Blend in the vanilla. The mixture will be thick, but pourable, like a soft polenta.

Preheat the oven to 375 degrees F.

Butter a 9-by-13-inch baking pan. Line bottom with 8 sheets of phyllo, layering them one at a time, and brushing each sheet with butter. The sheets will be larger than the baking pan. Be certain that the bottom is covered by pressing the dough into the corners, and allow the excess to run up the sides of the pan. Phyllo sheets not in use should always be covered with a damp towl.

Pour the milk filling over the sheets. Cover with remaining 12 sheets of phyllo, repeating the layering process, and brushing each sheet with butter.

With a very sharp knife, trim the dough around the edges of the pan, and score the top diagonally in two directions to make diamond-shaped slits on the surface. Sprinkle the top with a little water, and bake 45 minutes to 1 hour. Check after 45 minutes. Pie is done when top is light brown and the filling is set.

As soon as the pie is in the ove, begin to make the syrup. Combine water and sugar in a 4 quart saucepan. Squeeze the halved lemon in the sugared water, and drop the juiced half in the liquid. Simmer on low heat for about 45 minutes. Discard the lemon. Very carefully, because syrup can boile vigorously, pour the hot syrup over the pie as soon as it is removed from the oven.

Let the pie cool completely, and then serve by cutting along the diagonal scores made prior to baking.

Notes: This is one of my favorite Greek desserts. It is so delicious. It is also wonderful with almond flavoring added in (in place of the vanilla).


Greek Honey Cake

Ingredients:

1 cup all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1 teaspoon orange zest
3/4 cup butter
3/4 cup white sugar
3 eggs
1/4 cup milk
1 cup chopped walnuts (we used almonds because my son isn't allergic to those)
1 cup white sugar
1 cup honey
3/4 cup water
1 teaspoon lemon juice

Directions:

Preheat oven to 350 degrees F. Grease and flour a 9-inch square pan. Combine the flour, baking powder, salt, cinnamon, and orange rind. Set aside.

In a large bowl, cream together the butter and 3/4 cup sugar until light and fluffy. Beat in the eggs one at a time. Beat in the flour mixture alternately with the milk, mixing just until incorporated. Stir in the walnuts (or almonds).

Pour batter into prepared pan. Bake in the preheated oven for 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool for 15 minutes, then cut into diamond shapes. Pour honey syrup over the cake.

For the Honey Syrup: In a saucepan, combine honey, 1 cup sugar, and water. Bring to a simmer and cook 5 minutes. Stir in lemon juice, bring to a boil and cook for 2 minutes.

Looks Aren't Everything

 

Let's be honest here. Some food is prettier than others. This recipe is just an ugly duckling that is really a swan in the taste department (not that I am saying it tastes like swan...I've never eaten swan...or duck, for that matter). Trust me on this one, this is delicious. It's also a pity I didn't post it before the Super Bowl, because this is a great food to have on hand for game time.

Hot Bean Dip

Ingredients:

1 (8 ounce) package cream cheese, softened
1 cup sour cream
2 (16 ounce) cans refried beans
1/2 (1 ounce) package taco seasoning mix
5 drops hot pepper sauce
2 tablespoons dried parsley
1/4 cup chopped green onions
1 (8 ounce) package shredded Cheddar cheese
1 (8 ounce) package shredded Monterey Jack cheese

Directions:

Preheat oven to 350 degrees F.

In a medium bowl, blend the cream cheese and sour cream. mix in the refried beans, taco seasoning, hot pepper sauce, parsley, green onions, 1/2 the Cheddar cheese, and 1/2 the Monterey Jack cheese. Transfer the mixture to an 8x12-inch baking dish. Top with remaining Cheddar and Monterey Jack cheeses.

Bake in the preheated oven 20-30 minutes, until cheese is slightly browned.

Notes: In all fairness to this recipe, it would have been prettier if the cream cheese had been mixed in a little smoother and if I had gotten a picture before it had been almost completely devoured. It didn't look too bad with the cheese melted on top, but once it had been dug into, it wasn't winning any beauty contests.

Another Oscars, Another Appetizer Night!

We have created a more recent family tradition where we have an "Appetizers for Dinner" night on the same night as The Academy Awards. It's always fun to try out all of these fun appetizer recipes and be able to eat as much as we want to without "saving room for dinner" because, well, it IS dinner!

Some of these are appetizers from another night that I am grouping here just for the sake of convenience.


Fabulous Spinach and Artichoke Dip

Ingredients:

1 (14 ounce) can artichoke hearts, drained and chopped
1 (10 ounce) container Alfredo sauce
1 (10 ounce) package frozen chopped spinach, thawed and drained
1 cup grated Parmesan-Romano cheese
1 (4 ounce) package cream cheese, softened
1/2 cup shredded mozzarella cheese
1 teaspoon minced garlic
ground black pepper, to taste
Tortilla chips, for serving

Directions:

Preheat oven to 350 degrees F.

Thoroughly mix artichoke hearts, Alfredo sauce, spinach, Parmesan-Romano cheese, cream cheese, mozzarella cheese, garlic, and black pepper in a bowl; spread into an 8-inch square baking dish.

Bake in preheated oven until cheeses are bubbling and melted, 25 to 30 minutes.

Notes: This is a copycat recipe of Applebee's spinach and artichoke dip. It is spot on and very delicious. It is fantastic paired with some of your favorite tortilla chips.


Antipasto Squares

Ingredients:

2 (10 ounce) cans refrigerated crescent dinner rolls
1/4 pound thinly sliced boiled ham
1/4 pound thinly sliced provolone cheese
1/4 pound thinly sliced Swiss cheese
1/4 pound thinly sliced Genoa salami
1/4 pound thinly sliced pepperoni sausage
1 (12 ounce) jar roasted red peppers, drained, cut into thin strips
3 eggs
3 tablespoons grated Parmesan cheese
1/2 teaspoon ground black pepper

Directions:

Preheat oven to 350 degrees F.

Unroll one package of crescent roll dough, and cover the bottom of a 9x13-inch pan. Layer the ham, provolone cheese, Swiss cheese, salami, pepperoni, and red peppers on top of the dough.

In a bowl, beat the eggs lightly, and stir in the Parmesan cheese and black pepper. Pour 3/4 of this mixture over the peppers. Unroll the second package of dough, and place over the top of the peppers. Brush with the remaining egg mixture. Cover with aluminum foil.

Bake for 25 minutes in the preheated oven. Remove foil, and bake another 10 to 20 minutes, or until dough is fluffy and golden brown. Cut into squares. Serve warm, or at room temperature.

Notes: These are not easy to dish out and serve, but they were very tasty.

 

Marinated Cheese

Ingredients:

1/2 cup olive oil
1/2 cup white wine vinegar
1 (2 ounce) bottle diced pimento, drained
3 tablespoons chopped fresh parsley
3 tablespoons minced green onions
3 cloves garlic, minced
1 teaspoon sugar
3/4 teaspoon dried basil
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1 (8 ounce) package Cheddar cheese
1 (8 ounce) package cream cheese, cold

Directions:

In a jar with a tight fitting lid, combine the olive oil, white wine vinegar, pimento, parsley, green onion, garlic, sugar, basil, salt, and pepper. Shake vigorously to blend. Set aside.

Cut the block of Cheddar cheese in half lengthwise. Cut crosswise into 1/4-inch slices to form squares. Repeat with cream cheese. Arrange cheese squares alternately in a shallow baking dish with slices standing on edge. You can arrange in a single long row, or 2 parallel rows depending on the size of your dish. Pour the marinade from the jar over the cheese slices. Cover and refrigerate for at least 6 hours, or overnight.

To serve, remove slices to a serving platter so they are still arranged in an alternating pattern. Spoon some of the extra marinade over the cheese, and serve with crackers.

Notes: This was such a pretty appetizer. So delicious too! You could alternate between Cheddar and Mozzarella slices (instead of cream cheese) if you are worried about the cream cheese being too messy. This was delicious though. The only drawback is that it is messy and drippy and I got some oil from the marinade on my shirt and it took quite a few washes to get that mess out!

 

Pigs in a Blanket

Ingredients:

2 pkgs. (8 ounces each) refrigerated crescent roll dough.
1 pkg. Lit'l Smokies
Ketchup and mustard, for serving

Directions:

Preheat oven to 400 degrees F. Separate each package of crescent roll dough into 8 triangles. Cut each triangle into 3 smaller triangles.

Place 1 sausage on the wide end of the triangle and roll towards the point. Place wrapped sausage point side down on baking sheet. Repeat with remaining sausages. Bake 9-10 minutes, or until golden brown. Serve with ketchup and mustard, if desired.

Bavarian Style Meatballs

Ingredients:

12 fluid ounces tomato-based chili sauce
1 (16 ounce) can whole cranberry sauce
27 ounces Bavarian-style sauerkraut, undrained
1 cup water
1 cup packed brown sugar
1 (16 ounce) package frozen meatballs

Directions:

In a medium size mixing bowl, combine chili sauce, cranberry sauce, sauerkraut, water, and brown sugar. mix well. Pour sauce and meatballs in a slow cooker; stir.

Cook, covered, at a medium temperature for 4 hours. Stir occasionally to coat meatballs.

Notes: The sauerkraut was kind of what caught our eye. It was an interesting ingredient, but it totally worked! These were great meatballs. Also, Teri Denlinger must have a more awesome slow cooker than I do because mine only has a low and a high heat setting. We just cooked ours on low.


Outrageous Warm Chicken Nacho Dip

Ingredients:

1 (14 ounce) can diced tomatoes with green chile peppers (such as Ro*Tel), drained
1 (1 pound) loaf processed cheese food (such as Velveeta, cubed
2 large cooked skinless, boneless chicken breast halves, shredded
1/3 cup sour cream
1/4 cup diced green onion
1 1/2 tablespoon taco seasoning mix
2 tablespoons minced jalapeno pepper, or to taste (optional)
1 cup black beans, rinsed and drained

Directions:

Place the diced tomatoes, processed cheese, chicken meat, sour cream, green onion, taco seasoning, and jalapeno pepper into a slow cooker. Cook on high, stirring occasionally until the cheese has melted and the dip is hot, 1 to 2 hours. Stir in the black beans, and cook 15 more minutes to reheat.

Notes: This isn't the prettiest, but it was very tasty. Serve it with tortilla chips and you're set!


Guacamole My Way

Ingredients:

5 avocados from Mexico, peeled, pitted, and diced
5 Roma tomatoes, seeded and diced
1/2 cup and 2 tablespoons finely diced onion
1 1/2 cloves garlic, minced
1 1/4 lime, juiced
1 1/4 teaspoons salt, or to taste

Directions:

Combine avocados, tomatoes, onion, garlic, and lime juice. Stir well, mashing avocado, but leaving a chunky texture. Season with salt; stir to combine.

Serve immediately or chill for 30 minutes.

Pico de Gallo

Ingredients:

3 medium tomatoes, diced
3 onions, finely chopped
1 1/2 fresh jalapeno peppers, seeded and chopped
6 sprigs fresh cilantro, finely chopped
3 green onions, finely chopped
1 1/2 teaspoons garlic powder
1/4 teaspoon salt
1/4 teaspoon pepper

Directions:

In a medium bowl, combine tomato, onion, jalepeno pepper (to taste), cilantro, and green onion. Season with garlic powder, salt, and pepper. Stir until evenly distributed. Refrigerate for 30 minutes.

Cheesy Bacon Corn Dip

Ingredients:

4 slices bacon
3 cups corn
4 oz. cream cheese
2 cups shredded Cheddar
1/4 cup sour cream
1/4 cup chopped chives
Kosher salt

Directions:

Preheat oven to 350 degrees F. In a large skillet, over medium heat, cook bacon until crispy. Transfer to a paper towel-lined plate to let drain, then chop.

In a large bowl, combine corn, cream cheese, Cheddar, sour cream, chives, and chopped bacon and season with salt. Stir until combined, then transfer to a baking dish.

Bake until warmed through and cheese is bubbly, 25 to 30 minutes.

We're Not the Only Good Cooks

 

My family is full of good cooks. We know good food when we taste it. However, of course we aren't the only good cooks out there! It's so fun to try traditional foods from other families too. Plus, it's so fun to share these recipes. My sister-in-law's family is full of awesome cooks. Here is one of their recipes that I tried and loved years ago and finally got a copy of this year.


Steadman Family Cheese Ball

Ingredients:

2 (8 oz) pkg. cream cheese, softened
4 green onions
1 jar of dried beef
Pecans

To decorate like a turkey:

1 Slim Jim (jerky stick)
1 spaghetti noodle soaked in red food coloring
Green and yellow food coloring
Pretzel sticks

Directions:

Chop green onions, dried beef and pecans.

Mix cream cheese, green onions, and dried beef togeteher. Roll into a ball and then roll in the pecans.

For turkey:

Put the Slim Jim in the cheese ball for the turkey's neck and head.

Color a little bit of the cream cheese green and yellow. Use cream cheese to create two green eyes and the beak on the Slim Jim.

Put pretzel sticks into the cheese ball for the turkey's tail feathers.

Notes: I rolled my cheese ball in chopped almonds since my son is allergic to pecans. It turned out great. Also, life is crazy with a new baby and I didn't have time to shape my cheese ball like a turkey, but be sure to check out the link above because it looks really cute as a turkey. This is really delicious. It makes for a great appetizer to satiate those pre-Thanksgiving dinner appetites!

Appetizers: Dippy





You can't have an appetizer night without some kind of dip! We have many different dips for you to choose from.


Creamy Cobb Salad Dip

Ingredients:

1 cup reduced fat or light sour cream
1/3 cup crumbled blue cheese
2 tsp. fresh lemon juice
1 vocado, chopped
4 slices cooked bacon, crumbled
2 tbsp. chopped fresh parsley
1 green onion, sliced
1 tbsp. chopped tomatoes

Directions:

Mix first 3 ingredients in medium bowl until blended.

Stir in all remaining ingredients except tomatoes.

Refrigerate 1 hour. Top with tomatoes before serving.

Recipe notes: Serve with celery sticks and your favorite crackers.

Pineapple Lush Dip

Ingredients:

1 pkg. (3.4 oz) Jell-O Vanilla Flavor Instant Pudding
1 can (20 oz) Dole crushed pineapple in juice, undrained
1 cup thawed Cool Whip Whipped Topping

Directions:

Add dry pudding mix to pineapple in medium bowl; whisk 2 minutes.

Stir in Cool Whip.

Recipe Notes: Layer remaining dip with cut-up fresh fruit in a parfait glass. Or serve spooned over slices of pound cake.

Philly Shrimp Cocktail Dip

Ingredients:

1 pkg. (8 oz) Philadelphia Cream Cheese, softened
3/4 lb. cooked cleaned shrimp, chopped (about 2 cups)
3/4 cup cocktail sauce
1/4 cup Parmesan cheese
2 green onions, sliced

Directions:

Spread cream cheese onto bottom of shallow bowl.

Toss shrimp with cocktail sauce; spoon over cream cheese.

Top with remaining ingredients. Serve with crackers.

Recipe Notes: You can substitute 1 pkg. (8 oz.) imitation crabmeat, coarsely chopped, for the shrimp.

Notes: We used mini shrimp rather than larger chopped shrimp. Good stuff!



Raspberry-Mint Marshmallow Creme Dip

Ingredients:

4 oz cream cheese (from 8-oz package), softened
1 cup marshmallow creme
1 container (6 oz) Yoplait Original Lemon Burst Yogurt
1/2 cup fresh raspberries
2 teaspoons chopped fresh mint leaves
15 fresh strawberries, stems removed, cut lengthwise in half
3 kiwifruit, each cut into 10 wedges
30 pieces (2-inch) fresh pineapple

Directions:

In medium bowl, beat cream cheese, marshmallow creme, yogurt, and raspberries with electric mixer on high speed until smooth. Stir in mint.

Cover and refrigerate at least 2 hours, but no longer than 12 hours. Serve dip with strawberries, kiwifruit, and pineapple.

Recipe Notes: This dip is also delicious with cut-up cantaloupe or watermelon, sliced peaches or grapes.

Notes: You can really serve this with any fruit that you would like. We also served this with cinnamon pita chips and it was fantastic. Be sure to soften the cream cheese first and then beat it until smooth before adding the marshmallow creme, yogurt, and raspberries in order to avoid lumps. This was so, so good.



World's Best Bacon Cheese Dip

Ingredients:

4 slices bacon
1 (8 ounce) package cream cheese, softened
1 cup mayonnaise
8 ounces Swiss cheese, shredded
2 green onions, finely chopped
4 buttery round crackers, crushed

Directions:

Place bacon in a large skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside.

In a small bowl, mix the cream cheese with mayonnaise until smooth. Stir in Swiss cheese, onions, and bacon. Place bowl in microwave and cook 2 minutes. Remove and stir well. Return to microwave, and cook 2 to 4 minutes more. Sprinkle crushed crackers on top. Serve warm with crackers.

Sun-dried Tomato and Cannellini Bean Dip

Ingredients:

2 3/4 cups canned cannellini beans, drained
8 sun-dried tomatoes in oil, drained
1 garlic clove, chopped
1 tbsp. chopped rosemary leaves
4 tbsp. olive oil
2 tbsp. red wine vinegar
1/2 cup water
Salt and black pepper, to taste

Directions:

Place beans, sun-dried tomatoes, garlic, rosemary, oil, vinegar, and water in a food processor or blender; pulse to smooth puree.

If necessary, adjust the consistency by gradually adding more water, 1 tbsp. at a time.

Add salt and pepper, to taste.

Cover and refrigerate for 30 minutes to allow the flavors to blend.

Serve chilled.

Recipe Notes: Make dip up to 3 days in advance. Cover and refrigerate. Cannellini are slender, ivory white Italian beans. Their creamy texture and their ability to absorb strong, aromatic flavors makes them ideal for dips. If you cannot find a source for cannellini beans, any canned white bean will make an excellent substitute.

Notes: This makes a lot, but it refrigerates well and leftovers are always great. This is very similar to hummus.


Chili Dip

Ingredients:

1 (8 ounce) package cream cheese, softened
1 (15 ounce) can chili without beans
1 (10 ounce) can diced tomatoes with green chile peppers, drained

Directions:

In a medium, microwave safe bowl, mix cream cheese, chili without beans, and diced tomatoes with green chili peppers.

Microwave cream cheese mixture on high 1 minute. Remove from microwave, stir, and repeat until the mixture is hot and thoroughly blended.

Notes: Not the prettiest dip in the whole world, but very tasty nonetheless. You could always sprinkle it with some chopped cilantro for a prettier presentation.




Bacon-Cheese Dip

Ingredients:

1/2 cup sour cream
1 (4 oz.) package crumbled blue cheese
1 (3 oz.) package cream cheese, softened
2 tablespoons diced onion
1/8 teaspoon hot sauce
4 bacon slices, cooked and crumbled
Garnishes: chopped fresh parlsey, blue cheese crumbles
Assorted crackers

Directions:

Process first 5 ingredients in a blender or food processor until smooth, stopping to scrape down sides. Stir in half of bacon. Cover and chill 2 hours. Let stand at room temperature 15 minutes before serving. Sprinkle with remaining bacon. Garnish, if desired. Serve with crackers.

Fluffy Caramel Apple Dip

Ingredients:

1 package (8 ounces) cream cheese, softened
1/2 cup packed brown sugar
1/4 cup caramel ice cream topping
1 teaspoon vanilla extract
1 cup marshmallow creme
3 medium tart apples
2 tablespoons lemon juice
2 tablespoons water

Directions:

In a small bowl, beat the cream cheese, brown sugar, caramel topping, and vanilla until smooth; fold in marshmallow creme. Cut apples vertically into thin slices.

In a small bowl, combine lemon juice and water; toss apples in lemon juice mixture. Drain.

Serve apple slices and cutouts with dip.

Yield: 2 cups.

Recipe Notes: If making for Halloween, use Halloween cookie cutters and cut out the center of each slice.

Pumpkin Fluff Dip

Ingredients:

1 (16 ounce) container frozen whipped topping, thawed
1 (5 ounce) package instant vanilla pudding mix
1 (15 ounce) can solid pack pumpkin
1 teaspoon pumpkin pie spice

Directions:

In a large bowl, mix together instant vanilla pudding mix, pumpkin, and pumpkin pie spice. Fold in the thawed frozen whipped topping. Chill in the refrigerator until ready to serve.

Mini Zucchini and Hummus

Ingredients:

Mini zucchini
Store bought hummus
Cayenne pepper

Directions:

Slice zucchini in half lengthwise. Spoon hummus on top. Sprinkle with cayenne pepper.

Notes: I took some of the extra ones home with me and had them for lunch the next day. Really good!

Appetizers: Jiggly and Wiggly




We made these ones for the kids, but they were very pretty...and anyone who is young at heart will love them. I am not the biggest fan of Jell-O, but even I thought these were pretty good.



Sparkling Raspberry Jigglers

Ingredients:

2 env. (1/4 oz. each) Knox Unflavored Gelatine
2 tbsp. sugar
2 cups carbonated lemon-lime soda
1 1/4 cups boiling water
2 pkg. (3 oz. each) Jell-O Raspberry Flavor gelating
1/4 cup cold water
36 fresh raspberries (about 1 1/3 cups), optional

Directions:

Mix unflavored gelatine and sugar in medium microwaveable bowl until blended. Stir in soda. Let stand 3 minutes or until gelatine is softened. Microwave on high 3 minutes or until gelatine and sugar are dissolved, stirring after each minute. Pour into 8-inch square dish sprayed with cooking spray.

Refrigerate 25-30 minutes or until set, but not firm. Meanwhile, add boiling water to raspberry gelatin mixes in separate medium bowl; stir 2 minutes until completely dissolved. Stir in cold water. Cool 15 minutes.

Pour raspberry gelatin gently over clear gelatine layer in dish. Refrigerate 1 hour or until firm. Cut into 36 squares; top with raspberries just before serving, if desired.

Recipe Notes: You can save calories and sugar per serving by preparing with diet carbonated lemon-lime soda and 2 pkg. (0.3 oz each) Jell-O Raspberry Flavor Sugar Free Gelatin and substituting 1 tbsp. granulated sugar substitute for the 2 tbsp. granulated sugar.

You can also prepare using any flavor of Jell-O Gelatin.

Appetizers: Meaty

 

You can't have appetizers for dinner without having meat appetizers! You need your protein, right?


Glazed Kielbasa

Ingredients:

3 pounds Johnsonville Polish Kielbasa Sausage or Polish sausage, cut into 1-inch chunks
1/2 cup packed brown sugar
1 1/2 cups ginger ale

Directions:

Place sausage in a 3-qt. slow cooker; sprinkle with brown sugar. Pour ginger ale over the top. Cover and cook on low for 4-5 hours or until heated through. Serve with a slotted spoon.

Yield: 12 servings.

Pineapple-Glazed Cocktail Meatballs

Ingredients:

1/2 cup Kraft Original Barbecue Sauce
1/2 cup undrained canned crushed pineapple in juice
30 frozen fully-cooked meatballs (15-oz. pkg.)

Directions:

Mix first 2 ingredients in large nonstick skillet.

Stir in meatballs until evenly coated.

Bring to boil on medium-high heat; simmer on medium-low heat 10 minutes or until heated through, stirring occasionally.

Notes: Easy peasy, nice and easy!

  
Baked Buffalo Wings

Ingredients:

3/4 cup all-purpose flour
1/2 teaspoon cayenne pepper
1/2 teaspoon garlic powder
1/2 teaspoon salt
20 chicken wings
1/2 cup melted butter
1/2 cup hot pepper sauce (such as Frank's RedHot)

Directions:

Line a baking sheet with aluminum foil, and lightly grease with cooking spray. Place the flour, cayenne pepper, garlic powder, and salt into a resealable plastic bag, and shake to mix. Add the chicken wings, seal, and toss until well coated with the flour mixture. Place the wings onto the prepared baking sheet, and place into the refrigerator. Refrigerate at least 1 hour.

Preheat oven to 400 degrees F.

Whisk together the melted butter and hot sauce in a small bowl. Dip the wings into the butter mixture, and place back on the baking sheet. Bake in the preheated oven until the chicken is no longer pink in the center, and crispy on the outside, about 45 minutes. Turn the wings over halfway during cooking so they cook evenly.

Classic Cocktail Meatballs

Ingredients:

2 lb. lean ground beef
1 pkg. (6 oz) Stove Top Stuffing Mix for Chicken
1 cup water
2 eggs
1 jar (12 oz) grape jelly
1 bottle (12 oz) chili sauce

Directions:

Heat oven to 400 degrees F.

Mix meat, stuffing mix, water, and eggs until blended. Shape into 50 (1 1/2 inch) meatballs; place in 2 foil-lined 15x10x1-inch pans sprayed with cooking spray.

Bake 16 minutes or until done. Meanwhile, bring jelly and chili sauce to boil in large saucepan on medium heat, stirring occasionally.

Add meatballs to sauce; stir to evenly coat.

Recipe notes: Meatballs in sauce can also be served in a slow cooker to keep warm.

You can freeze the meatballs by loosely packing cooled cooked meatballs in freezer-weight resealable plastic bags. Lay bags flat in freezer so meatballs will freeze individually. Store in freezer up to 3 months. Thaw in refrigerator several hours or overnight before cooking with the sauce until heated through, stirring frequently.

Notes: I was taking these to a party and at the very last minute, I decided to double them...but I didn't have the ingredients to double the sauce. I wouldn't recommend this. It needs the amount of sauce called for in the recipe. They were still good...but they needed more sauce. So, if you double the meatballs, double the sauce too! These were very easy and tasty though. I put them in a slow cooker to keep them warm...and again, I think I would just serve them in a foil covered baking dish instead because they can lose their shape and start to fall apart if they are in a slow cooker for too long. However, I thought these were great and I will definitely be making these again.

Appetizers: Cheesy

 


Who doesn't love an appetizer that basically just consists of cheese? Here are a couple that you will enjoy if you are as big a fan of cheese as we are.


Brie Cheese Appetizer

Ingredients:

1 (8 ounce) wheel Brie cheese
3 tablespoons apricot preserves
1/2 (17.5 ounce) package frozen puff pastry, thawed
1 egg white

Directions:

Preheat oven to 350 degrees F. Lightly grease a cookie sheet.

Slice one wheel of Brie cheese in half so you have 2 circles of cheese. Spread apricot or peach preserves on the cut side half of one circle of brie. Make sandwich out of the two halves of Brie so that the preserves are in the center of both halves. Wrap the entire wheel of Brie with one sheet of puffed pastry and flip the entire concoction onto the prepared cookie sheet so the seam is on the bottom. Brush the puffed pastry with the egg white.

Bake for 30 minutes, or until the pastry is golden brown. Serve immediately.

Baked Fontina

Ingredients:

1 1/2 lbs. Italian fontina, rind removed and cubed into 1-inch pieces
6 cloves garlic, thinly sliced (see notes)
1 tbsp. fresh thyme, chopped
1 tsp. fresh rosemary, chopped
3 tbsp. extra virgin olive oil
1/2 tsp. Kosher salt
1/2 tsp. freshly ground black pepper

Directions:

Adjust top rack of the oven so that it sits about 5 inches under the broiler unit. Preheat broiler.

Spread cheese out in the bottom of a 12-inch cast iron pan. Drizzle olive oil over the cheese. Mix together the garlic and herbs in a small bowl and sprinkle the mixture evenly over the cheese. Sprinkle salt and pepper over the top of the cheese.

Bake for 6 minutes, until the cheese is bubbly and melted through. Carefully remove the pan from the oven and set it on a a heatproof surface--the pan will be hot! Serve immediately.

Notes: This was really good. However, we all agreed it was very garlicky. We would decrease the garlic next time around. Also, serve right from the oven. Once this cools, you will need a knife to cut it. It is still super tasty at that point, but as I said, you will need a knife to cut it into pieces and put it on your crackers.


Above: Serve this fondue-style...because what you see above needed a knife. However, it was still super tasty that way, so do it however you want!
