Theme Night: Mexican Edition

 

So, if you haven't realized this yet, we like to do a lot of theme nights. Here are some great finds from our Mexican theme night that we had recently.

 

Carnitas

Ingredients:

1 (3-1/2 to 4 lb.) pork shoulder, boneless and well-marbled
1 (12 oz.) bottle or can of beer or beef broth
Water, as needed
2 tsp. salt
1/2 tsp. ground cumin
2 tbsp. lard or vegetable shortening
Corn tortillas, for serving
Favorite toppings, for serving (salsa verde, diced onions, shredded cabbage or lettuce, pico de gallo, sliced radishes, fresh cilantro, guacamole, shredded cheese or crumbled cotija cheese, etc.)

Directions:

Slice the pork into 2-inch chunks and arrange in a Dutch oven or roasting pan.

Add the beer (or beef broth) and enough water to barely cover the meat. Stir in the salt and the cumin. On the stove top, over medium-high heat, bring the mixture to a boil.

When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 300 degrees F. and preheat, lid closed, for 10 to 15 minutes.

Carefully transfer the pan with the meat to the grill grate. Roast the pork, uncovered until the meat is very tender, 2 1/2 to 3 hours, stirring occasionally. Add a bit more water to the pan if most of the liquid has evaporated.

When the pork is tender, drain off any remaining cooking liquid and discard. Break the meat into bite-size chunks with a fork. (The recipe can be prepared to this point up to three days ahead. Let cool and refrigerate.)

Add the lard to the pan and return the pan to the grill grate. Increase the temperature of the Traeger to 400 degrees F.

Let the meat "fry" in the lard until it is browned and some bits are slightly crisp, about 15 to 20 minutes, stirring frequently. Serve with the suggested accompaniments. Enjoy!

Notes: If you don't have a Traeger Grill, you could always slow cook the meat...but the flavor and texture of the meat won't be the same, of course.

 

Grilled Mexican Street Corn (Elotes)

Ingredients:

1/4 cup mayonnaise
1/4 cup sour cream or Mexican crema
1/2 cup finely crumbled Cotija or feta cheese, plus more for serving
1/2 teaspoon ancho or guajillo chili powder, plus more for serving
1 medium clove garlic, finely minced (about 1 teaspoon)
1/4 cup finely chopped cilantro leaves and tender stems
4 ears shucked corn
1 lime, cut into wedges

Directions:

Light 1 chimney full of charcoal. When all charcoal is lit and covered with gray ash, pour out and spread coals evenly over half of coal grate. Alternatively, set half the burners of a gas grill to high heat. Set cooking grate in place, cover grill, and allow to preheat for 5 minutes.

While coals heat, combine mayonnaise, sour cream or crema, cheese, chili powder, garlic, and cilantro in a large bowl. Stir until homogeneous and set aside.

When grill is hot, place corn directly over hot side of grill and cook, rotating occasionally, until cooked through and charred in spots on all sides, about 8 minutes total.

Transfer corn to bowl with cheese mixture and use a large spoon to evenly coat corn on all sides with mixture. Sprinkle with extra cheese and chili powder and serve immediately with lime wedges.

Notes: Holy cow, this was good. I could eat a meal of this and only this.

 

 

Mexican Chopped Salad

Ingredients:

Dressing:

1/4 cup fresh lime juice
2 tablespoons honey
1/2 teaspoon cumin
1 clove garlic, finely minced
1/2 teaspoon salt
2 tablespoons canola oil
2 tablespoons extra virgin olive oil
freshly ground black pepper
Salt, to taste, if needed

Tortilla Strips:

6 6-inch corn tortillas
1 1/2 tablespoons canola oil
1/2 teaspoon sea salt

Salad:

1 medium head romaine lettuce, chopped in approximately 1/2-inch pieces
1 medium bell pepper, diced in 1/4-inch pieces, any color
1/2 medium red onion, diced in 1/4-inch pieces
1/2 medium jicama, peeled and diced in 1/4-inch pieces
1 medium zucchini, diced in 1/4-inch pieces
4 medium tomatoes, seeded and diced into 1/4-inch pieces
4 ears corn, cooked (if fresh corn is not in season, substitute 1 1/2 cups of sweet, tiny frozen corn, thawed)
1 1/2 cups canned black beans, drained and rinsed
1/2 cup finely chopped cilantro, plus whole cilantro leaves for garnish, if desired

Directions:

Dressing:

Combine lime juice, honey, cumin, garlic, and salt. In a slow, steady stream,a dd the oils, stirring continuously with a fork or small whisk. Taste and add more salt and pepper, if needed. Set aside.

Tortilla Strips:

Preheat oven to 400 degrees F. Stack corn tortillas on a cutting board. Cut in half. Cut each stack of halves into thin strips, width-wise, about 1/4-inch thick.

Transfer tortilla strips to a sheet pan. Drizzle with oil. Sprinkle with salt and toss to coat.

Bake for 15-20 minutes, stirring every 5 minutes, or until light golden brown and crisp. Set aside to cool.

Salad:

Combine corn and other salad ingredients in a large bowl. Stir to combine. Add dressing and stir to coat all ingredients. Garnish with cilantro leaves, if desired.

Serve with tortilla strips on top or place a bowl on the side for people to garnish their salad as desired.

Notes: This was fantastic even without the tortilla strips. This was such a light, fresh salad. Everyone loved it. It also kept surprisingly well the next day if you have any leftovers.

 

Vine-ripe Tomato Salad with Queso Fresco and Serrano

Ingredients:

2 large round tomatoes
1 red onion, thinly sliced
1 serrano pepper, thinly sliced
1 tablespoon chopped cilantro leaves
1/4 cup queso fresco
1 teaspoon Mexican oregano
1 tablespoon extra-virgin olive oil
1 tablespoon white wine vinegar
Salt and pepper, to taste

Directions:

Slice tomatoes about 1/4-inch thick and arrange on a plate with the sliced onion. Place the sliced chile alongside the tomatoes and sprinkle the cilantro on top and around the plate. Crumble the queso fresco on top.

In a bowl, combine the oregano, oil, and vinegar and mix well. Drizzle the vinaigrette on top just before serving. Season with salt and pepper, to taste.

Notes: Those serrano peppers do give this some heat, so if you don't like spicy stuff, eat around them! However, I thought this was absolutely fantastic. So delicious and such a great way to use up fresh garden tomatoes.

Pico de Gallo

Ingredients:

1 medium tomato, diced
1 onion, finely chopped
1/2 fresh jalapeno pepper, seeded and chopped
2 sprigs fresh cilantro, finely chopped
1 green onion, finely chopped
1/2 teaspoon garlic powder
1/8 teaspoon salt
1/8 teaspoon pepper

Directions:

In a medium bowl, combine tomato, onion, jalapeno pepper (to taste), cilantro, and green onion. Season with garlic powder, salt, and pepper. Stir until evenly distributed. Refrigerate for 30 minutes before serving.

Notes: Poor Mom. After all the work to make this, she forgot to set it out at our family dinner, so none of us got to partake, and I didn't get to take pictures. I'm sure it was fantastic though!

Giving a Shout Out!

 

I need to give a shout out to my brothers. They are quickly becoming seasoned cooks as well (so now, it's not just the gals in our family who like to cook). They all own smokers and have become pros on how to smoke meat. We have all benefited from their fantastic and delicious smoked meats at a number of family dinners. My brother brought a smoked turkey to our Thanksgiving feast that was to die for! It had such an amazing flavor and it was so moist. They now have a Facebook page and a YouTube channel. I definitely suggest you check them out!

Our Family Loves Pork

 

I am waaaay behind on blogging (though I am catching up). A new baby and moving to a new house will do that to you! I thought about doing separate posts for each of these recipes, but decides to just group them together instead. We have a lot of family dinners and pork is a great way to feed such a large group. Here are some great pork tenderloin and pork roast recipes we have found over the past year.

By the way, in case you are curious, the pork in the picture above is Grilled Pork Tenderloin (recipe below), served with some corn on the cob (in the foil), Minty Watermelon-Cucumber SaladLayered Buffalo Chicken Salad, and Warm Dijon Potato Salad.

 

Honey-Mustard Pork Tenderloin

Ingredients:

1/4 cup coarse-grain or Dijon-style mustard
2 tablespoons honey
2 tablespoons mayonnaise, such as Hellmann's
1 tablespoon chopped fresh parsley, rosemary, or tarragon, or 1 1/2 teaspoons dried
1 1/2 teaspoons Traeger Pork and Poultry Rub
2 pork tenderloins, each 12 to 14 ounces, silver skin trimmed

Directions:

In a small bowl, combine the mustard, honey, mayonnaise, parsley, and Traeger Pork and Poultry Rub; stir to mix. Lay the pork tenderloins in a flat baking dish. Pour the mustard-honey mixture over the tenderloins, turning to coat all sides. (If not cooking immediately, cover with plastic wrap and refrigerate.)

When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 325 degrees F and preheat, lid closed, for 10 to 15 minutes.

Lift the tenderloins out of the mustard-honey mixture and arrange on a diagonal on the grill grate. (Discard the remaining mustard-honey mixture.) Grill for 30 to 40 minutes, or until the pork reaches 160 degrees F on an instant-read meat thermometer. Transfer to a cutting board and let rest for 3 minutes. Slice into 3/4-inch slices and serve.

Notes: As I mentioned in another post, my brother now has a Traeger grill. I don't think there is any way to duplicate this amazing smoked meat without a Traeger grill, but I'm sharing this recipe for those of you out there who have one.

 

Above: You'll get a wonderful pinkish smoke ring on your meat when you cook with the Traeger grill. It is nothing to be afraid of. The meat is not underdone. Just use a meat thermometer to check the meat.


Grilled Pork Tenderloin

Ingredients:

1 whole pork tenderloin, approximately 1 pound
1 lime, zest finely grated
1/2 cup freshly squeezed lime juice
1/4 cup honey
1 1/2 teaspoons kosher salt
1/2 teaspoon garlic powder
1 chipotle chile pepper in adobo sauce
1 teaspoon vegetable oil
1 tablespoon chopped fresh cilantro leaves

Directions:

Trim the pork tenderloin of any excess fat and silver skin.

Place the lime zest, lime juice, honey, salt, and garlic powder in a small, lidded jar, and shake to combine. Pour half of the marinade mixture into a 1-gallon resealable bag, add the chipotle pepper, and move around to combine. Add the pork tenderloin to the bag and seal, removing as much air as possible, and place in a container to catch any leaks. Marinate in the refrigerator for 6 to 24 hours, rotating the bag halfway through the time. Place the remaining marinade in a covered container and refrigerate until ready to use.

Remove the tenderloin from the bag and allow to sit at room temperature while preparing the grill. Remove the reserved marinade from the refrigerator.

Fill a large chimney starter with natural lump charcoal and light. Once the charcoal is ashy and white, approximately 30 minutes, dump the hot charcoal onto the lowest grate of the grill and spread into an even layer using extra-long tongs. Place the cooking grate back on the grill and cover with the lid; heat the grate to medium heat for 2 to 3 minutes.

Brush the grill with vegetable oil. Remove the tenderloin from the bag and place in the center of grate. Discard bag with marinade. Cover and cook for 12 to 15 minutes, turning ever 1 1/2 to 2 minutes, until the tenderloin reaches an internal temperature of 140 degrees F.

Remove the tenderloin from the grill and place on a large piece of heavy-duty aluminum foil folded at the edges to create a basket, and pour on the reserved marinade. Wrap tightly and rest for 10 minutes. Remove to a cutting board and slice. Garnish with cilantro and serve.

Notes: This was good stuff! We let people top it with cilantro on their own according to their preference.

 

Slow Cooker Cranberry Orange Pork Roast

Ingredients:

2 tbsp. oil
1 flat boneless pork loin roast (4 lb.)
1 can (14 oz) whole berry cranberry sauce
1/2 cup Kraft Classic Catalina Dressing
1 tbsp. less-sodium soy sauce
1 tbsp. cornstarch
1 tsp. zest and 1/4 cup juice from 1 orange

Directions:

Heat oil in large skillet on medium-high heat. Add meat; cook 4 to 5 minutes. on each side or until browned on both sides. Transfer meat to slow cooker.

Mix cranberry sauce, dressing, and soy sauce; pour over meat. Cover with lid.

Cook on low 4 to 5 hours. Remove meat from slow cooker, reserving liquid in slow cooker. Cover meat to keep warm. Whisk remaining ingredients in small bowl until blended; stir into liquid in slow cooker. Cook, covered, on high 10 minutes or until thickened.

Slice meat; place on platter. Drizzle lightly with sauce. Serve with remaining sauce.

Notes: Tasty and so easy! The sauce was really nice with the pork.

 

Balsamic Roasted Pork Loin

Ingredients:

2 tablespoons steak seasoning rub
1/2 cup balsamic vinegar
1/2 cup olive oil
2 pounds boneless pork loin roast

Directions:

Dissolve steak seasoning in balsamic vinegar, then stir in olive oil. Place pork into a resealable plastic bag and pour marinade on top. Squeeze out air and seal bag; marinate 2 hours to overnight.

Preheat oven to 350 degrees F.

Place pork into a glass baking dish along with marinade. Bake in preheated oven, basting occasionally until the pork reaches an internal temperature of 145 degrees F, about 1 hour. Let the roast rest for 10 minutes before slicing and serving.

A Taste of the South

 

My youngest brother served his mission in Mississippi, so we decided to have a southern food theme night to help him bring back some good food memories.

 

Glazed Cajun Meatloaf

Ingredients:

2 tablespoons vegetable oil
1/2 cup finely diced onion
1/2 cup finely diced celery (2-3 stalks)
1/2 cup finely diced red or green bell pepper
3 green onions (scallions), white and green parts thinly sliced
2 cloves garlic, minced
1 to 2 jalapeno peppers, seeded and finely diced
1/2 cup beef broth or milk
1/2 cup ketchup
1 1/2 tablespoons Traeger Cajun Rub, or your favorite Louisiana-style rub
1 to 2 tablespoons Worcestershire sauce
1 to 2 tablespoons Louisiana-style hot sauce such as Crystal or Frank's RedHot
1 tablespoon Creole-style mustard, brown mustard, or yellow mustard
1 teaspoon black pepper
1 1/2 pounds ground beef
1/2 pound ground pork
1/2 pound andouille or other spicy sausage, removed from casing
1 large egg, lightly beaten
1 cup dry bread crumbs
1 cup ketchup (for the glaze)
3 tablespoons brown sugar (for the glaze)
1 tablespoons Louisiana-style hot sauce, or more to taste (for the glaze)
1 tablespoon white vinegar, or more to taste (for the glaze)
2 teaspoons Creole-style mustard, brown mustard, or yellow mustard (for the glaze)

Directions:

Line a rimmed baking sheet with foil. Spray a wire cooling rack with cooking spray and set on top of the baking sheet. In a large frying pan, saute the onion, celery, bell pepper, green onion, garlic, and jalepeno(s) in the oil until the vegetables soften, about 5 minutes. Add the beef broth, ketchup, Traeger Cajun Rub, Worcestershire sauce, hot sauce, mustard, and pepper, and stir to combine. Remove from the heat and let cool completely.

In a large mixing bowl, combine the ground beef, pork, and andouille sausage. Add the egg, bread crumbs, and the cooled vegetable mixture. Mix lightly but thoroughly with your hands until well combined. Form a rectangular loaf about 8 inches long and 1 1/2 to 2 inches high. Lay it on top of the cooling rack. When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Put the pan with the meatloaf on the grill grate and smoke for 1 hour. Increase the temperature to 325 and bake the meatloaf for 1 hour.

In the meantime, make the glaze: Combine the ketchup, brown sugar, hot sauce, white vinegar, and mustard in a small saucepan. Simmer for 5 to 10 minutes. Pour the glaze evenly over the meatloaf, or brush it on with a pastry brush. Continue to cook the meatloaf for 30 minutes more, or until the internal temperature in the thickest part is 160 degrees F. Let the meatloaf rest for 10 minutes before slicing and serving.

Notes: My brother has a Traeger Grill and as a result, he has gotten into a cooking craze of his own and contributes to our family Sunday dinners greatly with his amazing smoked meats! This was awesome. You can always bake this in your oven...but it won't have the same smoky flavor.

 

 

Authentic Louisiana Red Beans and Rice

Ingredients:

1 pound dry kidney beans
1/4 cup olive oil
1 large onion, chopped
1 green bell pepper, chopped
2 tablespoons minced garlic
2 stalks celery, chopped
6 cups water
2 bay leaves
1/2 teaspoon cayenne pepper
1 teaspoon dried thyme
1/4 teaspoon dried sage
1 tablespoon dried parsley
1 teaspoon Cajun seasoning
1 pound andouille sausage, sliced
4 cups water
2 cups long grain white rice

Directions:

Rinse beans, and then soak in a large pot of water overnight.

In a skillet, heat oil over medium heat. Cook onion, bell pepper, garlic, and celery in olive oil for 3-4 minutes.

Rinse beans, and transfer to a large pot with 6 cups water. Stir coked vegetables into beans. Season with bay leaves, cayenne pepper, thyme, sage, parsley, and Cajun seasoning. Bring to a boil, and then reduce heat to medium-low. Simmer for 2 1/2 hours.

Stir sausage into beans, and continue to simmer for 30 minutes.

Meanwhile, prepare the rice. In a saucepan, bring water and rice to a boil. Reduce heat, cover, and simmer for 20 minutes. Serve beans over steamed white rice.

Kickin' Collard Greens

Ingredients:

1 tablespoon olive oil
3 slices bacon
1 large onion, chopped
2 cloves garlic, minced
1 teaspoon salt
1 teaspoon pepper
3 cups chicken broth
1 pinch red pepper flakes
1 pound fresh collard greens, cut into 2-inch pieces

Directions:

Heat oil in a large pot over medium-high heat. Add bacon, and cook until crisp. Remove bacon frm pan, crumble, and return to the pan. Add onion, and cook until tender, about 5 minutes. Add garlic, and cook until just fragrant. Add collard greens, and fry until they start to wilt.

Pour in chicken broth, and season with salt, pepper, and red pepper flakes. Reduce heat to low, cover, and simmer for 45 minutes, or until greens are tender.

Cajun Potato Salad

Ingredients:

3 lbs. red potatoes
1/3 cup creole mustard
1/2 teaspoon creole seasoning (or cajun spice)
1/2 cup green pepper, diced1/3 cup mayonnaise
1/3 cup sour cream
1/2 teaspoon sugar
1/2 cup bacon, cooked and chopped
1/4 cup parsley, chopped
Salt and pepper, to taste

Directions:

Add potatoes to lightly salted water; cover, bring to a boil on high heat, then reduce to a simmer about 20 minutes or until potatoes are fork tender. Drain and cut into 1" chunks (you can peel them or leave them unpeeled, according to your preference).

Combine mustard and creole seasoning in a medium sized bowl. Add warm potatoes. Toss to combine.

Add green pepper, green onion, and bacon.

Combine mayonnaise, sour cream, and sugar. Add to potatoe mixture and season with salt and pepper, to taste. Sprinkle with parsley, if desired.

Refrigerate for at least 3 hours prior to serving.

Notes: I always love potato salad...no matter the flavor combination! This was really good.


 

Sour Cream 7-Up Biscuits

Ingredients:

4-5 cups buttermilk baking mix (like Bisquick)
2 tablespoons granulated sugar, or to taste
1/8 tsp. baking powder
1 cup sour cream
Up to 1 cup regular or diet lemon-lime soda
1/4 cup (1/2 stick) butter, melted, optional

Directions:

Preheat oven to 375 degrees F. Whisk together the dry ingredients; add in the sour cream. Stir, adding in the lemon lime soda, a little at a time, until dough comes together and is shaggy. Add more baking mix if needed. Sprinkle a bit of the baking mix on the counter. Turn out dough onto counter and gently pat into a round about 1 inch thick. Using a 3-inch biscuit cutter or a glass dipped into flour, begin to cut out biscuits. Place them on a half sheet baking pan that has been lightly sprayed with non-stick cooking spray, sides slightly touching for soft biscuits, or about an inch apart if you like the edges more crisp. Drizzle with melted butter, if desired.

Bake at 375 degrees F. for 20-25 minutes, or until light golden brown.

Cook's note: Make sure you are using fresh baking powder, and also shake or stir it in the container before measuring out.

Banana Pudding

Ingredients:

3/4 cup sugar
1/4 cup all-purpose flour
1/4 teaspoon salt
3 cups 2% milk
3 large eggs
1 1/2 teaspoons vanilla extract
8 ounces vanilla wafers (about 60 cookies), divided
4 large ripe bananas, cut into 1/4-inch slices

Directions:

In a large saucepan, mix sugar, flour, and salt. Whisk in milk. Cook and stir over medium heat until thickened and bubbly. Reduce heat to low; cook and stir 2 minutes longer. Remove from heat.

In a small bowl, whisk eggs. Whisk a small amount of hot mixture into eggs; return all to pan, whisking constantly. Bring to a gentle boil; cook and stir 2 minutes. Remove from heat. Stir in vanilla. Cool 15 minutes, stirring occasionally.

In an ungreased 8-inch square baking dish, layer 25 vanilla wafers, half of the banana slices, and half of the pudding. Repeat layers.

Press plastic wrap onto surface of pudding. Refrigerate 4 hours or overnight. Just before serving, crush remaining wafers and sprinkle over top.

Yield: 9 servings.

Nutrition information: 1 serving equals 302 calories, 7 g fat, 80 mg cholesterol, 206 mg sodium, 55 g carbohydrate, 2 g fiber, 7 g protein.
