Old Fashioned Comfort Food


When you think of the term "comfort food," one of the first things that comes to mind if meatloaf and mashed potatoes.

Here is one of our family favorite recipes for meatloaf. We served it on Oscar night (comfort food to comfort the losers).

Old-Fashioned Meatloaf

Ingredients:

1 lb. ground chuck
1/4 cup grated onion
1/4 cup chopped parsley
1/2 cup chili sauce, divided
2 tbsp Worcestershire sauce
Salt and pepper, to taste

Directions:

Preheat the oven to 350 degrees F. Place the chuck, onion, parsley, 2 tablespoons of the chili sauce, the Worcestershire, and salt and pepper in a bowl. Toss together lightly.

Form the meat into a 5-inch by 3-inch oval loaf in a small baking pan. Spread the remaining tablespoon of chili sauce all over the surface of the meatloaf. Bake for 30 minutes, or until cooked through. Do not overbake.

Serves 4

Nutrition information: 285 calories, 9 g carbohydrates, 2 g protein, 17 g fat, 86 mg cholesterol.

Notes: This recipe is just so good. It's so easy and basic, but it always hits the spot.

  1. You would shape these prettier. But it is an easy recipe and even people who don't normally like meatloaf, like it. It can be halved for two or doubled, triple, etc. for more.
