Summer Salads, Part 6

 

This salad is fun in that it combines greens and pasta. We really liked this a lot. Besides, if it has sun-dried tomatoes, pasta, and mushrooms in it, count me in!


Delicatessen Pasta Salad

Ingredients:

2 (9 oz) packages fresh spinach and ricotta tortellini
1 (7 oz) jar mixed sliced roasted sweet peppers in olive oil
1 (8 oz) jar mushrooms in olive oil, drained
1 (8 oz) sun-dried tomatoes in oil, drained
1 cup basil
3 cups arugula
Black pepper

Directions:

Bring a large saucepan of lightly salted water to a boil. Add the tortellini and cook according to the package directions. Drain well and transfer to a large bowl.

Add the jar of mixed roasted pepper, including the oil, along with the drained mushrooms and sun-dried tomatoes.

Add the basil and arugula. Season with black pepper, stir gently to combine, and serve warm.

Summer Salads, Part 5

 

I have told you (and quite recently) that I can never get enough of potato salad. Old favorites, new favorites, bring 'em on! This might just be one of the best potato salad recipes EVER.

We changed a few things from the original recipe, so I am going to type the recipe as we prepared it and then you can check the original recipe in the link provided below.


Roasted Potato Salad with Balsamic-Bacon Vinaigrette

Ingredients:

5 lbs. baby red potatoes, cut in half or quartered
1/4-1/2 cup olive oil, plus an additional 1/4-1/2 cup olive oil
1/2 cup minced garlic
1 tablespoon seafood seasoning (we used Old Bay Seasoning)
8 ounces bacon
1/4 cup balsamic vinegar
salt and pepper, to taste
1 large red onion, thinly sliced
1 bunch Italian parsley, minced
6 hard boiled eggs, roughly chopped

Directions:

Preheat oven to 350 degrees F.

Toss halved potatoes with 1/4-1/2 cup olive oil (as needed, to coat potatoes), 1/2 cup garlic, and seafood seasoning. Place in a single layer onto baking sheets and bake in preheated oven until tender and golden brown, 30 to 40 minutes, depending on the size of the potatoes. Once cooked, remove from the oven and allow to cool slightly.

Meanwhile, place bacon in a large, deep skillet. Cook over medium heat until evenly browned and crispy. Pour off bacon grease. Allow the bacon slices to cool, then crumble and set aside.

Whisk together balsamic vinegar, salt, and pepper in a large bowl. Pour in the oil in a slow, steady stream while whisking vigorously to make a vinaigrette (start with 1/4 cup). Toss the roasted potatoes together with the vinaigrette. Add in additional 1/4 cup olive oil, if needed. Fold in red onion, parsley, and eggs. Allow to stand at room temperature 20 minutes before serving.

Notes: No lies, this potato salad is a lot of work, but holy cow, it is totally worth it. This is one of the best potato salad recipes I have ever had. If you are looking for a mayonnaise-free potato salad, this is it.

Here are the changes we made: We used 5 lbs. baby red potatoes instead of 3 lbs. We used 1 1/2 tablespoons Old Bay Seasoning instead of only 1 tablespoon. I also increased the bacon slightly from the 8 ounces called for in the recipe. The original recipe calls for one whole cup of garlic! Instead, we used 1/2 cup of garlic while roasting the potatoes and omitted the other 1/2 cup of garlic that the original recipe added in when tossing the potato salad. The original recipe called for 1/2 cup of olive oil when roasting the potatoes and another 1/2 cup of olive oil when tossing the potato salad (1 cup total). As you can tell by the original ingredients, this potato salad is more of a main course! I tossed my potatoes in 1/4 cup olive oil before roasting and then made the vinaigrette with 1/4 cup olive oil. After tossing the potato salad, it needed a little more olive oil to coat it, but not a whole 1/2 cup (at least, in my opinion). The original recipe also called for reserving the bacon grease and tossing that in the vinaigrette at the end. I felt that the potato salad didn't need that extra fat, and the bacon grease wasn't needed to add any flavor, especially since I increased the bacon called for in the recipe. I probably used a little less than a full bunch of parsley too. Finally, I used 6 hard boiled eggs instead of 5 (as called for in the original recipe). The real trick for this recipe is that rather than buying simple sliced bacon, you buy bacon ends and pieces, chop it up, cook it, and then toss that in the salad.

We have had this salad with halved potatoes and quartered potatoes. I personally prefer quartering the potatoes (even though it looks prettier halved) because it goes farther and I feel like I don't overeat the salad quite as much this way. Though, let's be honest, it's hard not to overeat this salad.

There you have it. This stuff is awesome. You seriously have to try it.

Summer Salads, Part 4

 

This is a great way to use your garden cucumbers. It is a great mix of sweet and sour flavors.


Favorite Cucumber Salad

Ingredients:

2 cups sugar
1 cup cider vinegar
1 tablespoon salt
1 tablespoon celery seed
7 cups thinly sliced peeled cucumbers (about 6 medium)
1 large onion, chopped
1 medium green pepper, chopped

Directions:

In a large bowl, whisk sugar, vinegar, salt, and celery seed. Add cucumbers, onion, and pepper; toss to combine. Refrigerate, covered, at least 1 hour, stirring occasionally.

Yield: 10 servings. Each serving is 3/4 cup and equals 183 calories.

Notes: We cut back on the sugar a bit. I would suggest starting out with a cup of sugar, tasting, and then going from there. We also thinly sliced our onions rather than chopping them. This time around, we omitted the green pepper. Use a slotted spoon to serve this because it creates a lot of juice, but this is really tasty stuff.

Summer Salads, Part 3

 

This salad isn't for everyone because some people don't like their watermelon to be messed with. I like to try new things, however, and I thought this was awesome. It is a really great mix of sweet and savory flavors, and it is very refreshing.

 

Minty Watermelon-Cucumber Salad

Ingredients:

8 cups cubed seedless watermelon
2 English cucumbers, halved lengthwise and sliced
6 green onions, chopped
1/4 cup minced fresh mint
1/4 cup balsamic vinegar
1/4 cup olive oil
1/2 teaspoon salt
1/2 teaspoon pepper

Ingredients:

In a large bowl, combine watermelon, cucumbers, green onions, and mint. In a small bowl, whisk remaining ingredients. Pour over salad and toss to coat. Serve immediately or refrigerate, covered, up to 2 hours before serving.

Yield: 16 servings (3/4 cup each). Each serving is 60 calories.

Summer Salads, Part 2

 

I can never get enough potato salad. I just love it...in all its forms. We've already posted many, but here is another good one!


Warm Dijon Potato Salad

Ingredients:

5 red potatoes
1/2 cup reduced-fat mayonnaise
2 tablespoons grated Parmesan cheese
1 1/2 tablespoons Dijon mustard
4 teaspoons cider vinegar
1/2 teaspoon cayenne pepper
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 teaspoon paprika
1/2 red onion, thinly sliced
2 green onions, chopped

Directions:

Place potatoes into a large pot and cover with salted water, bring to a boil. Reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and cut into cubes.

Combine mayonnaise, Parmesan cheese, Dijon mustard, vinegar, cayenne pepper, salt, black pepper, and paprika in a large bowl. Add potatoes, red onion, and green onions; gently toss to combine.

Summer Salads, Part 1

 

Here's a cool salad with a little kick to it. It won't keep well the next day, but it will be fun while it lasts!


Layered Buffalo Chicken Salad

Ingredients:

6 cups shredded deli rotisserie chicken
1 cup ranch dressing
1/2 cup hot sauce
1 cup sliced celery
2 cups crumbled blue cheese (8 oz)
5 cups shredded romaine lettuce
2 cups grated peeled carrots

Directions:

In large bowl, toss chicken, dressing, and hot sauce.

In 6-quart trifle bowl or glass bowl, layer as follows: Gently transfer chicken mixture to the bowl, being careful to keep sides of bowl clean. Top with sliced celery, then half the blue cheese, focusing efforts around outside of bowl. Top with romaine, then carrots, then remaining blue cheese.

Recipe notes: If you like it spicy, add an extra 1/4 cup of hot sauce to the chicken. It won't change the consistency dramatically.

Serves 16.

Notes: I really liked this. We served this as a side dish, but this is a perfect main course salad. We tossed the salad to make it easier to serve. This was perfect for summer!

Quick Breakfast

 

This is a slightly different take on granola bars. It's kind of a way to combine your overnight yogurt oatmeal and granola bars into one.

 

Overnight Oatmeal Bars

Ingredients:

1 container (5.3 oz) Yoplait Greek blended yogurt (any flavor)
1 cup almonds
1 cup old-fashioned oats
1/2 cup dried fruit (any variety)

Directions:

In food processor, place all ingredients. Cover; process until a ball forms, stopping occasionally to scrape down sides of bowl with spatula.

Line loaf pan with foil. Empty food processor bowl into loaf pan, pressing down mixture with spatula. Refrigerate at least 30 minutes to firm up; slice into bars, and serve. Can also be covered and refrigerated overnight.

Yield: 8 servings. 200 calories per serving.

Notes: I liked these. The yogurt gives the bars a tart flavor. I used dried apricots and vanilla yogurt. A lot of people who gave these negative reviews on the Pillsbury website did it because they were expecting a crunchy granola bar. That is not what these are. They are soft and chewy. If you are looking for a crunchy or chewy traditional granola bar, find another recipe. These need to be refrigerated because of the yogurt, so they are cold when you eat them. A perfect cool breakfast for summer time!
