Thanks Again, Grandma


Well, I thought I had all of my Grandma Salazar's recipes, but thanks to my aunt, I now have another one. Once again, it has been proven to me that my grandma definitely knew her way around the kitchen. This is a recipe worth keeping.


Grandma Salazar's Pork Chili

Ingredients:

2 tablespoons vegetable oil
3-5 garlic cloves, minced
1 medium red onion, diced
3-5 pounds cubed pork
1 tablespoon oregano
2 tablespoons cumin
2 tablespoons chili powder
2-3 cans diced green chiles
2 cans (14.5 oz) stewed tomatoes
Salt and pepper, to taste

Directions:

Heat 1 tablespoon vegetable oil in a large pot over medium-high heat. Add minced garlic and diced red onion. Saute until fragrant. Remove garlic/onion mixture and set aside.

Add 1 tablespoon vegetable oil to pan and add cubed pork to brown. When the pork is browned, add the garlic-onion mixture back into the pan and add the oregano, cumin, and chili powder. Stir to combine.

After stirring the mixture, add diced green chiles and stewed tomatoes. Simmer for a minimum of two hours, or until you can't resist it any longer!

  1. My mom was a good cook and rarely followed a recipe as is. She could go to a restaurant and taste a dish and then come home and replicate it. Very talented. And very maverick!
