More Potatoes, Please!
For me, potatoes often outshine the main course. I just love them! Here are some great potato recipes for you to round out your meal.
Slow Cooker Loaded Mashed Potatoes
Ingredients:
3 pounds potatoes (about 9 medium), peeled and cubed
1 package (8 ounces) cream cheese, softened
1 cup (8 ounces) sour cream
1/2 cup butterm, cubed
1/4 cup 2% milk
1 1/2 cups (6 ounces) shredded cheddar cheese
1 1/2 cups (6 ounces) shredded pepper jack cheese
1/2 pound bacon strips, cooked and crumbled
4 green onions, chopped
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
Directions:
Place potatoes in a Dutch oven and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until tender. Drain. Mash potatoes with cream cheese, sour cream, butter, and milk. Stir in cheeses, bacon, onions, and seasonings. Transfer to a large bowl; cover and refrigerate overnight.
Transfer to a greased 3- or 4-quart slow cooker. Cover and cook on low for 3 to 3 1/2 hours.
Yield: 10 servings.

Notes: For me, this could be a satisfying meal all by itself. Nothing else required. Yummy stuff.
Mashed Potato Dream
Ingredients:
4 large potatoes, peeled and quartered
1/4 cup butter
1 bunch green onions, sliced
1 tablespoon prepared horseradish
1 teaspoon garlic powder
2 tablespoons grated Parmesan cheese
1/2 cup milk
Freshly ground black pepper, to taste
Salt, to taste
Directions:
Bring a large pot of salted water to a boil. Add potatoes, and cook until tender, about 25 minutes; drain.
Melt butter in a medium saucepan over medium heat. Stir in green onions, and cook until tender, 3 to 5 minutes.
Mix green onions, horseradish, garlic powder, Parmesan cheese, milk, pepper, and salt with potatoes. Mash together with a potato masher.

Again with the freeing up of stovetop. Here's the thing. I really dislike mashing potatoes at the same time that I'm cooking corn and slicing roast and taking rolls out of the oven. I'm all about the do-ahead. My father-in-law used to cook the big Sunday dinner and well do I remember him sitting down to dinner sweat dripping off of his brow. both of these can be done in the crockpot. I especially like the do ahead one that can be done the day before. To be frank, the horseradish in the second one is an acquired taste. I liked it and some didn't. A lot of restaurants put horseradish in potatoes so this will be to whatever your taste.
